Alternative filling for lemon

As part of a Christmas box of goodies I usually add some mini lemon meringue tarts however I'm trying to think of other fillings I could use instead of the lemon. Thought passionfruit would be a good alternative but that's as far as I've got.

Any bright easy ideas to help my uninspired brain?

I bought similar jars of chocolate fairly recently to the ones Delia lists, but can't remember where. May have been Tesco, not M & S. I think there was a salted caramel version, too.

but you do have to make your own clementine curd, so maybe not so 'quick and easy'.

Alternatively make lemon as usual and sprinkle with edible gold dust / freeze dried raspberry powder for a change?

Lots of recipes on line for cheat's banoffee tarts, using bought tinned condensed milk caramel or jar of dulce de leche.

Bake some little pastry cases blind .

.Mix Nutella with thin cream - about half Nutella to the cream .
I'd use 400 grams to 400 mls .
Add beaten eggs x 2 plus yolk x 2 and a little plain flour about a tablespooful to stabilise the mix .

Bake slowly until it set , but still wobbles.

Decorate with chopped roasted hazelnuts and maybe one whole one .

I looked up the ingredients for what I thought were my Nutella pies !
A friend had asked me and I never measure things.
The recipe suggests another egg .

I'm wondering about making some of your tartlets savoury -that's what I'm about to do with a batch of mine .

Delia has some great savoury recipes .

And here's one of mine :

Coronation Chicken tarts :
I'll be making these to celebrate the life of our late Queen .

Start the night before as the flavours need to develop :

One jar of Hellman's Mayonnaise -800 grams . Some mayonnaise is too sweet .

Beat a little .

Add about one dessertspoon of mango chutney .

Ditto apricot jam .

Add one dessertspoonful of hot curry powder .
If chillies upset you could use a milder one .
I usually add more .

Good squeeze of lime or lemon juice to bring out the tang .

Leave in the fridge overnight .

Taste it .
It should be tangy , spicy and sweet , but adjust if you find it not to your taste .

Cut up some cold chicken or turkey into little pieces .

If I've cooked it then the chicken is slow poached .

Add a few dried apricots - cut small .

Season .

Final tasting !

And put in pastry cases , which you have baked blind .

I might decorate with a few toasted slivered almonds .

If you prefer these hot then I'd replace the mayonnaise with cream and use enough to cover the chicken pieces .

In the summer , I've added chives .

It's also nice with fresh coriander , which compliments the curry flavour .

Esmay The Coronation Chicken tarts made Mr A sit up and smile 😄 His favourite sandwich filling, never thought of doing tarts. I'll give those a go in the New Year, thanks. Can't spoil him too much at Christmas 😀

I hope that I haven't made too much work for you .

I like Coronation Chicken on a bed of shredded iceberg lettuce served with buttery baked potatoes .

I think that Nadiya Hussein has become my favourite cookery writer , because her ideas remind me of my own !

I'm always tweaking recipes .

The trouble is -nothing is ever written down !

I had some leftover Coronation Chicken and some pastry that's why I ended up putting it in tartlets .

I forgot to write - if the mayonnaise mixture is too curried - add some cream !

My other stand by - a savoury custard and using up any leftover cheese with a tiny pinch of cayenne and paprika ,but easy on the salt .

At the moment , I'm wondering about pickled cucumbers and dried tomatoes .

I'm thinking that those tomatoes would be nice in a tart and a side of picked cucumbers with sour cream .

And now ,
it's mushrooms and what I can do with them !

No rude ideas !
