Coronation Chicken tarts :
I'll be making these to celebrate the life of our late Queen .
Start the night before as the flavours need to develop :
One jar of Hellman's Mayonnaise -800 grams . Some mayonnaise is too sweet .
Beat a little .
Add about one dessertspoon of mango chutney .
Ditto apricot jam .
Add one dessertspoonful of hot curry powder .
If chillies upset you could use a milder one .
I usually add more .
Good squeeze of lime or lemon juice to bring out the tang .
Leave in the fridge overnight .
Taste it .
It should be tangy , spicy and sweet , but adjust if you find it not to your taste .
Cut up some cold chicken or turkey into little pieces .
If I've cooked it then the chicken is slow poached .
Add a few dried apricots - cut small .
Season .
Final tasting !
And put in pastry cases , which you have baked blind .
I might decorate with a few toasted slivered almonds .
If you prefer these hot then I'd replace the mayonnaise with cream and use enough to cover the chicken pieces .
In the summer , I've added chives .
It's also nice with fresh coriander , which compliments the curry flavour .
