Storing Beetroot.

We’ve had some lovely beetroot in the garden this year. What is the best way to store it? Should it;

Be left in the ground?

Stored in bottom of refrigerator?

Put in a box with sand?

I don’t want to pickle it, have just been harvesting and cooking it as we need it, and would like to be able to keep doing that if possible.

Years ago when we grew beetroot we stored in a box with sand, in a shed. I think when left in the ground it gets woody.

Yes if you want to use it fresh, damp sand in cool dark place.

Or freeze it but I’m not terribly keen on that or pickle it.
